Below is the recipe:
1. I finely chopped half a head of purple cabbage, 4 Persian cucumbers, 1 small red bell pepper, 1 jalapeño, 1 avocado, a large handful of fresh chive, an even larger handful of flat parsley. You can use cilantro for the parsley if you’d like.
2. For the dressing, in a small food processor combine 1-2 inch piece of fresh ginger, 2 fresh garlic cloves, 1/4 cup of SOAKED walnuts (put walnuts in water and soak overnight in the fridge), 2 tablespoons of avocado or olive oil, 3 tablespoons rice vinegar, juice of 1 large lime, a solid couple pinches sea salt, ground pepper, 3 tablespoons mayo or avocado mayo, and 2 heaping teaspoons gochujang paste.
3. Give everything a pulse in the food processor, then taste to see if you want to add anything else to modify to your taste.
4. Top salad with your dressing, add toasted black or white sesame seeds, then toss salad well.
5. Enjoy as is, or serve with your favorite protein (chicken or shrimp would be amazing).
