4 quarts
1/2 Cup dry pinto beans (pint – 1/4)
1/4 Cup rice (pint – 2 Tbsp)
1/3 Cup bell pepper, diced (pint – 2 1/2 Tbsp)
1/3 Cup onion, diced (pint – 2 1/2 Tbsp)
1 Cup ground beef, browned and drained (pint – 1/2 cup)
4 Tablespoons Rotel (pint – 2 Tbsp)
1 Tablespoon taco seasoning (pint – 1/2 Tbsp)
1/2 Teaspoon salt (pint – 1/4 tsp)
Beef broth to fill quart jars to 1-inch head space
Steps
Add the ingredients to each jar in the order above.
Pressure can quart jars at 10 lbs for 90 minutes (pints 75 minutes).
