Quick lunches makes my life so much easier right now. I don’t want to have to cook an entire meal and I sure don’t want to eat bread with PB every day 😂.

This salad took me 5 minutes and can actually be made ahead of time.

Here are some tips for quick lunches:

🥗 Salad - Buy ingredients for your favorite salad, such as spinach, arugula, tomatoes, cucumber, bell peppers, carrots, beetroot, etc. Cut them all up over the weekend and food prep for the week. Either divide your ingredients between smaller containers or have them in one big salad bowl. Don’t add your dressing to it, to avoid it from getting soggy. Once you are ready for you lunch, serve as much as you want, add your dressing or just lemon juice and olive oil, and other ingredients such as feta, mozzarella, avocado, and/or chicken.

🌯 Wraps - Same as with the salad buy your ingredients, such as lettuce, tomatoes, cucumbers, onions, etc. Cut them all up and store them in the fridge. Buy a rotisserie chicken, tofu, or any other protein source and tortillas or wraps. For lunch, take your ingredients and wrap them up. Add fresh lemon and a drizzle of dressing.

🥣 Protein Bowls - Sauté or bake veggies ahead of time, such as zucchini, squash, pumpkin, sweet potatoes, mushrooms, etc. Store them in containers in your fridge until ready to serve. Combine your ingredients, add protein such as chicken, tofu, eggs, etc, and sprinkle everything with your favorite dressing.

Pro Tip. If you store cut up produce in the fridge, I usually drizzle a little bit of lemon juice over them to avoid them from getting brown.
