Gluten Free Cornbread - using Masa Harina | Chef Terry

I felt like making some cornbread. Most recipes and mixes use wheat flour. I change this up a bit to make it gluten free by using Masa Harina. Masa, for short, is a flour made by soaking the corn in an alkaline solution the grinding. This give the corn a stronger flavor and can be ground finer. if you have had a corn tortilla you have had Masa. I also decided to use my cast iron skillet.

Ingredients
2 cups Buttermilk
2 Eggs
1 oz Butter melted
1 oz Honey
Pinch of Salt
1 cup Masa Harina
1 cup Corn Meal
1 teaspoon Baking Powder
1 teaspoon Baking Soda
2 Fresno Chilies, Roasted and chopped
2 teaspoon Ancho Powder
