How to make Goulash- Slovenian Style

A savoury dish, easy to make and very very tasty! Follow these easy steps and enjoy a traditional dish from Slovenia. (similar to Austrian,Hungarian or German Goulash)

I used bison, but you can use any meat that you have on hand. I like to use a mixture of beef, and pork. (it was a treat to have a bison roast to use.) This recipe will make cheap cuts of meat taste great!

Here is a list of ingredients
Ingredients
5 tbs Lard or Butter
5 medium onions -Chopped
6 garlic cloves - Chopped
2 tsp ground cumin
2 tsp ground pepper
4 tbs smoked paprika
2 tsp dried marjoram
3 lbs Bison, or Beef cubed (1.5") or a mixture of beef,pork ,wild game.
4 tbs flour (all purpose will do )
4 cups beef broth
1 cup red wine
salt to taste
You may need corn starch to thicken it up.
1, Chop up your meat into bite size pieces about 1-1.5"
2. Place on your smoker. set to smoke. Smoke for about 45min
While you are waiting for your meat.
3.Melt butter and saute the onions till translucent
4. Stir in all of the spices. (garlic, pepper, marjoram ,cumin and salt)
5. cook on med heat until onions are a nice dark brown colour. and set aside.
When your meat is ready
6. Cover the meat with flour. This will help to thicken up the Goulash.
7.Heat up your pan and brown the meat and than mix in with the onions.
8.Deglaze your pan with wine (loads of flavour there) and mix that in with your meat and onion mixture.
9. Add Broth until it covers the meat.
10. Bring to a boil and reduce heat to a simmer.
11. Let it cook for 90 minutes to 2 hours and check for tenderness. Cook longer if needed.
12. If the goulash is a bit to soupy cook uncovered for 30 minutes. If this does not work you can add a mixture of cornstarch and water.
You can serve it with potatoes,noodles,dumplings, bread or by itself!

A hint. Goulash is always better the next day!
