sweet potato biscuit. Let me know if you make them!!!
1&1/4 cup all purpose flour
1/2 tsp salt
1 tbsp baking powder
2 tbsp sugar
1 cup cooked mashed sweet potato
1/4 very cold butter, grated
5-7 tbsp milk
Instructions:
Whisk together sweet potatoes & 5 tbsp milk.
In larger bowl whisk flour,sugar, baking powder and salt.
Cut in butter with a fork till crumbs. Add potato/milk mixture.
Mix together and shape into biscuits.
kneed a few times..may need a bit more flour. but the dough will be sticky!
Bake till lightly browned. DONT overbake like I did haha. 14 minutes at 425 degrees F.
SERVE WARM. Very important. with honey butter.
