Very chilled butter 75g.
Cream (30-36%) 120g.
salt 1/3 teaspoon.
6 eggs.
A pinch of salt.
Sugar 165g.
Beat until light and thick (about 10 minutes).
Flour 130g.
Cocoa 40g.
Baking powder 1.5 teaspoons.
Mix gently from bottom to top.
Baking pan 40/29 cm.
Bake in a preheated oven at 180°C for 15 minutes.
Cut into 4 parts.
Chocolate 100g. Hot cream 30-36% 150g.
Blend until smooth. Cooling down.
Fresh cheese 400g. powdered sugar 50g. Whipping cream 30-36% 200g.
Beat until firm peaks.
Add chilled chocolate. Blend until smooth.
Impregnation:
Warm milk 150ml.
2 tablespoons caramel.
Roasted Hazelnuts 120g.
Chop a little.
Mix with caramel.
collect cakes.
Refrigerate for 2-3 hours.
