INGREDIENTS :

8 Pork sausages
1 chopped medium onion
400 grams chopped tomatoes in juice ( 14.1 oz )
100 ml marsala wine ( 3.4 fl oz )
400 grams canned butter beans ( drained ) ( 14.1 oz )
1/4 teaspoon sugar ( 1 grams )
1 tablespoon red wine vinegar ( 14.9 grams )
1 tablespoon tomato puree ( 14.9 grams )
1/2 teaspoon paprika ( 1.15 grams )
2 bay leaves
50 grams breadcrumbs ( 1.7 oz )
2 minced garlic cloves
handful fresh chopped parsley leaves
3 tablespoons olive oil ( 41 grams )
1/4 teaspoon salt ( 0.57 grams )
1/4 teaspoon ground black pepper ( 0.58 grams )
INSTRUCTIONS :
.in a pan on medium heat, add 1 tablespoon olive oil
.once heated, add 8 pork sausages, cook until brown ( approximately 6 to 8 minutes ) & remove
.in same pan, add 1 medium chopped onion & cook for approximately 5 minutes
.add 1/4 teaspoon sugar, 1/4 teaspoon salt
.add 1/4 teaspoon ground black pepper, cook for 1 minute
.add 1 tablespoon red wine vinegar, 1 tablespoon tomato puree
.add 1/2 teaspoon paprika & stir well
.add 400 grams chopped tomatoes in juice, 100 ml marsala wine & stir well
.add 400 grams butter beans, & stir well
.add 2 bay leaves, place the sausages on top half submerged
.place in preheated oven 180 c / 356 f for 15 to 20 minutes
.in a mixing bowl add 50 grams breadcrumbs, 2 minced garlic cloves
.add handful fresh chopped parsley, 1 tablespoon olive oil & mix well
.add the breadcrumb mixture to casserole
.drizzle with 1 tablespoon olive oil
.Place back in oven for 5 to 10 minutes or until breadcrumbs are golden
