Grandma's Zucchini Casserole #keepingitfreshcollab @Boots and Bounty Homestead

Zucchini Casserole

6 Slices of Bacon cooked and crumbled and set aside for later. Keep bacon grease in pan.

Saute 1/4 cup onion, 1/4 cup celery, 1/4 cup green pepper in the bacon grease.

Add 1/2 cup rice to bacon grease vegetable mixture. Stir well to coat rice.

Add in 1/2 cup Zucchini, 1/2 cup tomatoes, 1/2 tsp. salt, 1/4 tsp. oregano, 1/4 tsp. thyme, 1/4 tsp. pepper, 1/2 cup of water. Stir it well. Cook on medium heat in the skillet for about 7 to 10 minutes.

Pour into a casserole dish. Sprinkle with 1 cup of shredded cheddar cheese, sprinkle the crumbled bacon that you set aside earlier on top of the cheese.

Put in the oven for 25 minutes at 350 degrees.
