The polyphenol-rich juice from beet leaves and stems may increase HDL cholesterol (good cholesterol) levels and lower triglyceride levels after a high-fat meal, a recent study suggests.

Data from a pilot study published in the journal Nutrition are believed to be the first to examine the potential cardiovascular benefits of juice from beet leaves and stems on blood lipid levels and blood pressure (BP).

The study joins a growing body of scientific evidence on the potential cardiovascular benefits of beet. Much of the previous data focused on beet, which is related to its nitrate content.

Over the past decade, the importance of nitric oxide in biological processes such as regulation of blood flow, blood pressure, cellular signaling, glucose homeostasis, and tissue response to low oxygen (hypoxia) has become increasingly clear.

Moreover, epidemiological studies have established a link between the consumption of green leafy vegetables and the reduction of the risk of cardiovascular diseases.
