Carne Mechada! (Slow-Cooked Pulled Beef with Nachos)

A great mid-week meal to please friends and family alike (or to eat it all solo - no judgement). These beef nachos are cooking on auto-pilot, stress free and simple enough to make from start to finish. All that is required is some basic chopping. frying and patience.

Feel free to customise your toppings or spice levels to your liking. The real hero of the dish is the beef. Initially fried to develop colour and flavour, it then is stewed with other vegetables and spices for 5-6 hours - this will break down any chewy bits and will blend all the different flavours into a thicccc broth that pairs well with any carb choice. In this video I used nachos, but it goes great with rice or potatoes too!
