Tomato chilly eggs

1 x chop large fresh tomato.
3 x chopped green chilies.
4 eggs, white and yolk separated.

Instruction
Fry the the chopped tomato until natural water is dry with out burning, add salt to help extract natural tomato water.

Add olive or sunflower oil to fry the dried tomato then add chillies.

Once oil is sizzling add egg whites and mix while it’s cooking, close lid for 2 minutes depending on heat if flame, low flame more time!.

Once egg whites are cooked add yolks and closed the lid to your preference if you would like the yolk runny only keep the lid on for 1 minute and 25 seconds.
