How to Make Chicken Fried Rice on the Blackstone Griddle

Chicken fried rice on the Blackstone griddle has to be one of the most popular recipes. I get a lot of questions about fried rice. Mainly about how to get the rice from being mushy or sticky.

For me the trick is getting the rice dry. I'll cook the rice and place in the fridge to dry out. It needs time. For this video I sped things up by placing into the oven on warm feature to help. Then I placed in the fridge. Wasn't as dry as I typically have, but still good to work with.

Fried rice is versatile. Your ingredients can be endless. For us, we added cabbage, onions, and peppers.

Cooking rice:

Ingredients
2 cups jasmine rice
water

1:1 ratio rice to water. I also rinse the rice numberous times to wash the starch off it before cooking.

Brought to a boil then reduced to low heat simmer, placed the lid on, and cooked for 15 mins. After 15 mins, I removed from the heat and let rest till somewhat cool. Then transfer to your sheet pan.

Ingredients for fried rice:

Cooked and dry rice
Oil
Butter
1 cup cabbage
1/2 cup red pepper
1/2 cup yellow pepper
1/2 cup onion
1/4 - 1/2 cup soy sauce or aminos
1-2 tablespoons Hoisin
Drizzle sesame oil
2 eggs
2 chicken breasts cubed
2 cloves garlic minced
thumb ginger minced/micro planed

Green onions for garnish
