Chicken Satay with Peanut Sauce on the Blackstone Griddle

I'm a huge fan of chicken satay and have always wanted to try it out. I made this chicken satay recipe with peanut sauce on Blackstone griddle which made the process so much faster and easier. The family enjoyed this recipe too and in fact my daughter wanted to take it for lunch to school. Ingredients I used are below.

Ingredients:

Chicken breast, tenders, or thighs - 1-2 lbs
1/3 cup coconut milk (stir it well)
1 teaspoon tumeric
2 tablespoons fish sauce
2 tablespoons brown sugar
Juice of 1/2 lime
2 teaspoons garlic paste or 2-3 cloves
1-2 teaspoons ginger paste
1 1/2 garlic chilli sauce
1 teaspoon curry powder

Garnish:
Green onions
Cilantro
Crushed peanuts

Peanut Sauce:
1/2 cup creamy peanut butter
1/4 cup of reserved marinade
1 tablespoon low sodium soy sauce
Juice of one lime
1-2 teaspoon garlic paste or 1-2 cloves
1 teaspoon of ginger paste
1/4 cup hot water - For desired thickness.
