TODDY PALM, How to open Asian Palmyra Fruit

Bumped into a villager at the market in Krabi Thailand. He was selling a heap of fresh toddy palm or Palmyra fruit. It's the fruit from the Palmyra Palm and is used in many Asian sweets. He kindly showed me how to open these and gave me a sample of the fruit. And yes he still has all his fingers. The top portion of the fruit must be cut off to reveal the three sweet jelly seed sockets, translucent pale-white, similar to that of the lychee but with a milder flavor and no pit. The jelly part of the fruit is covered with a thin, yellowish-brown skin. These are known to contain watery fluid inside the fleshy white body.
