Question: Which foods are high in
methionine?
-EGGS: high in sulphur amino acids
[methionine & cystine]
"All animal foods are adequate in

all plant foods are low"
Cattle & other ruminant animals:
-very important part of food chain
-stomach full of bacteria

Bacteria on roots take inorganic
-NITROGEN from soil
-form organic amines
-made into proteins in plants
PROBLEM: plants don't have the
right balance of proteins for humans
[they are built for plant roots, seeds, flowers, etc]

Ruminant animal: take that plant...
-their gut bacteria will rebalance all of
the amino acids [for mammal use]
-capture inorganic nitrogen
-MAKE the essential amino acids
THAT MAMMALS NEED
-concentrate it for US
"Humans evolved by being able to use
more concentrated protein!
If just ate plants, it is hard to get enough"
For every 60g of plant protein a ruminant eats,
will make 100g essential amino acid balanced protein

Ruminant animal: 'Up cyclers'
-dairy, meat, goats, sheep, deer
-eat grass...produce quality protein
-making protein from inorganic nitrogen
-not in protein form
-in fibers:
"They are able to upcycle that"
"Able to increase the value of
non-amino acid nitrogen.
Plus capture all the other nitrogens"
[We cannot]

Flora in cow have certain bacteria...
-will produce methionine or lysine
