Ginger Garlic Salmon

Serves 2

Ingredients

1.5 lb salmon (cubed)
Salt to taste
Black pepper to taste
1 teaspoon paprika
1 teaspoon garlic powder
2 tablespoon honey
2 tablespoon neutral oil

[Sauce]
1/2 cup pineapple juice
4 tablespoon soy sauce (low sodium)
2 tablespoon rice vinegar
2 teaspoon corn starch
1 teaspoon sugar
1 teaspoon black pepper
1 large jalapeño (minced)
2 tablespoon minced garlic
1 tablespoon minced ginger
Cooking oil as needed

Option garnish: Fried Garlic

NOTE: this dish is best paired with Steamed Rice

Instruction

1. Set your oven to broil on high

2. Season the salmon with salt, black pepper, paprika, garlic powder, honey and oil. Give it a mix then transfer to a baking tray line with parchment paper

3. Broil on high for 10 minutes or until your desired doneness

4. While the salmon is cooking, combine the pineapple juice, soy sauce, rice vinegar, sugar, black pepper, and corn starch. Whisk everything together and set aside

5. Next add oil to a pan on low heat. When the oil is warm add minced garlic, ginger, and jalapeño.

6. Once its fragrant add the sauce base and bring it to a simmer until the sauce is thickened

7. Remove the salmon from the oven and add it to the sauce

8. Mix until the salmon is coated with the sauce, transfer to a plate and garnish with fried garlic
