Shrimp Avocado Ceviche Recipe: Low Carb, Keto & Healthy!

Shrimp avocado ceviche aka ceviche de cameron is one of my favorite healthy snacks! The great thing about these citrusy shrimp salads is they are keto friendly, low carb, and gluten free so they can be enjoyed guilt free! I'll show you how to make easy avocado shrimp ceviche so delicious you will keep wanting more and more.

This peruvian and mexican food pairs nicely with a cocktail or two or three, and may I suggest you keep the theme going and make a fresh squeezed lime margarita!

INGREDIENTS:
Cooked Shrimp (If you have raw shrimp simple boil them for a minute or two)
Avocados
Red Onion
Cucumber
Garlic Cloves
Jalapenos
Serrano Peppers
Tomatoes
Cilantro
Lemon
Lime
Salt
Pepper

Optional Fish: Ground Fish, Octopus, Salmon, other
Optional Citrus: Grapefruit, Orange

DIRECTIONS:
1. Slice your veggies into bite sized pieces. Chop up your garlic, peppers, and cilantro.
2. Slice up your cooked shrimp into bite sized pieces or leave them whole.
3. Place cooked shrimp in a bowl and cover with fresh lemon and fresh lime juice (Optional: add grapefruit or orange juice).
4. Mix in chopped cilantro, sliced red onion, chopped garlic, Jalapeno, and Serrano.
5. Put other veggies aside.
6. Add Salt and Pepper to taste
7. Put in the fridge for 30 minutes.
8. After 30 minutes combine all ingredients together.
9. Serve and eat immediately. (You can also serve with salsa, toritllas, toritlla chips)
10. Pour a margarita or cocktail!
11. Enjoy your ceviche fiesta
