This air fryer eggplant chips recipe is one of my favorite healthy snacks to make. They are keto friendly, low carb, gluten free, vegetarian, healthy, crispy, and delicious!

INGREDIENTS:
1 Big Eggplant or Chinese Eggplant

DIRECTIONS:
1. Chop eggplant into 1/4 inch pieces
2. Smother in olive oil and seasoning (I use salt, pepper, garlic powder, chili powder, and oregano)
3. Air Fry 325 Degrees 25 Minutes
4. Flip
5. Another 15 minutes.
6. Add more sea salt
7. Let cool 5 minutes
8. Enjoy
