This healthy, delicious, and easy to make vegetarian instant pot burrito bowl is better than takeout (and Chipotle)! If you love quinoa, are a vegetarian, vegan, on the low carb diet, or just looking for a healthy easy to make meal in your pressure cooker or instant pot, this is the meal for you. This recipe is so easy to make, you can add any other veggies you desire and it will still come out perfect!

Black Bean Burrito Bowl Ingredients:
1 Can of corn
1 Can of black beans
1 Can of crushed tomatoes
1 Red Onion
3 Jalapenos
4 Garlic cloves

Veggie Burrito Bowl Directions:
1. Chop Jalapeno, Garlic, and Red Onion
2. Saute in for 2 minutes in your instant pot or pressure cooker
3. Add corn, black beans, and crushed tomatoes
4. Add spices: salt, pepper, paprika, garlic powder, cumin, and anything else you like
5. Close the lid and seal the vent
6. Cook 1 minute manual temperate
7. Let pressure release naturally.
8. Once pressure is released serve with your favorite toppings like tortilla strips, avocados, sour cream, cheese, or hot sauce!
9. Enjoy
