KETO TURKEY TETRAZZINI | WHAT TO COOK WITH LEFTOVER TURKEY | KETO CASSEROLE
You know you might have lots of leftover Thanksgiving turkey. So if you are on the hunt for turkey leftover recipes, make some leftover turkey tetrazzini! This low carb turkey tetrazzini is the perfect leftover turkey casserole. It is simple to make - great for those nights after the holidays when you are short on time.

You can substitute chicken in this recipe as well. If you are looking for a keto leftover rotisserie chicken recipe, you can use this keto turkey tetrazzini recipe to make your chicken casserole. But I love this dish with keto leftover turkey.

For the noodles, I use keto pasta noodles called Miracle Noodle. They are a shirataki noodle and are all fiber from a konjac yam, so they have zero net carbs and are the ideal replacement for pasta in the keto recipes.

KETO TURKEY TETRAZZINI

2 packages of Miracle Noodle Angel Hair Pasta
4 tablespoons butter
4 garlic cloves, minced
8 oz sliced mushrooms
½ teaspoon salt
½ cup diced celery
1 cup dry white wine, like sauvignon blanc or chardonnnay
2 teaspoons arrowroot powder
½ cup heavy whipping cream
1 cup turkey or chicken broth
8 oz cream cheese, cubed
3 cups shredded leftover turkey or chicken
1 cup finely chopped olives
1 cup shredded monterey jack cheese
1 cup grated parmesan cheese
2 cups spinach leaves

Cook Miracle Noodles according to package directions.
Add butter to a skillet and melt over medium high. Add garlic and saute for 1 - 2 minutes. Add mushrooms and salt, then cook for a few minutes. Add in celery and cook until the veggies are soft. Pour in the wine and simmer until the liquid reduces by half.
Sprinkle in the arrowroot powder and stir for 1 minute. Slowly pour in the heavy cream, whisking while pouring. Then slowing pour in the broth. Simmer until the sauce thickens a bit.
Reduce heat to medium low, then add cream cheese. Stir until melted. Add in the leftover turkey, olives, cheeses, Miracle Noodle pasta, and spinach. Stir to combine. Season with salt and pepper to taste.
Pour into a casserole dish and bake at 350 for 20 minutes.
