Keto Recipe: Chicken and Cauliflower Tabbouleh!

It's one more portion of #I LIKE TO EAT, including a recipe for a keto-accommodating variant of tabbouleh!

The base is cauliflower rice (which I got from Dealer Joe's). Likewise in the blend: cucumber, cherry tomato, garlic, cilantro, scallions, mint leaves, lemon, salt, olive oil, and chicken!

Here is the recipe, and it truly couldn't be less difficult:

In a microwave-safe bowl, join one pound of cauliflower rice (either a pack from TJ's or a beat in-your-food-processor head), one tablespoon of olive oil, and a quarter teaspoon of salt. Heat for three minutes, then spread it on a baking sheet and permit it to cool while you set up the other fixings:

In a huge blending bowl, join the accompanying things:

Two cups of cilantro leaves, hacked.
One cup of mint leaves, hacked.
One clove of garlic, minced.
Two scallions (barring the more obscure green part).
One teaspoon of new lemon zing.
Four tablespoons of lemon juice (crushing the lemon you just ground is the perfect sum).
3/4 Tablespoon of salt.
4 Tablespoons of olive oil.
One cup of divided cherry tomatoes.
One cucumber, cultivated and diced.
2.5 cups of chicken bosom.

Add the cooled cauliflower and blend! That is all there is to it. It's totally scrumptious and somewhat low-carb.
