How to Season a Wok

While I was working in the L.A. area in 76 through 77, I kept going to Asian restaurants and began wondering how difficult it was to cook like that. I found out it was really easy and started learning. I still have the original wok from that time. My wife told me to go ahead and talk about her error with my wok. She got busy cleaning things and attacked that nasty old blackened wok only to find it’s like a cast iron skillet. Just don’t clean them like everything else. You just have to season them all over again. In this video I show how I season a wok these days. Never scrub them with anything more than a bamboo or luffa scrubber and a bit of soap and water. After that heat them up to make certain they’re nice and dry and then wipe them down with a light coat of oil. When oil gets rancid around here, I save it for seasoning pots and pans and woks.
