My all time favorite pumpkin treat at Starbucks (besides the Pumpkin Spice Latte) is the Pumpkin Scone. OMMMGenius! It is soft and pumpkiny on the inside and the glaze...the glaze, well I could just scrape that off with my teeth and eat it. It’s sooo good. I’m sure there are about 60 grams of carbs in one of those pumpkin scones, so it’s off limits.

But I decided to make my own Keto Pumpkin Scone with pumpkin spice glaze. This is actually a keto pumpkin ginger scone, but if you aren’t a fan of ginger, you can always leave that out. This keto scone recipe is perfect for those chilly mornings when you want a hot coffee and sweet pumpkin treat for breakfast. These low carb scones are great for any meal. In fact, I had one of these keto scones for dinner the other night.

KETO PUMPKIN GINGER SCONES

1 cup almond flour
½ cup coconut flour
2 tablespoons Swerve
½ teaspoon salt
½ teaspoon ginger powder
2 teaspoons baking powder
½ teaspoon baking soda
4 tablespoons cold unsalted butter, cubed
½ cup pumpkin puree
¼ cup buttermilk or heavy cream
2 tablespoons ChocZero Maple Syrup (or other sugar free syrup or extra buttermilk/heavy cream)

Preheat the oven to 400 degrees.
Add dry ingredients to a food processor and pulse until combined. Add butter and pulse until it is a cornmeal consistency.
In a separate bowl, combine the pumpkin, buttermilk, and syrup. Add to dry ingredients. Pulse until a dough ball forms.
On a lightly floured surface, mold the dough into a rectangle about ½ to ¾ inch thick. Cut into triangles and place on a parchment lined baking tray.
Bake for 12 to 15 minutes until lightly browned. Cool on a rack.

KETO PUMPKIN SPICE GLAZE

½ cup confectioners Swerve
2 tablespoons heavy cream
1 tablespoon water
½ teaspoon vanilla or maple extract
½ teaspoon pumpkin pie spice

Mix all ingredients together and drip over cooled scones.

MACROS per scone (makes 12 scones) without glaze
