Keto pumpkin mug cake can be made in minutes! So you don’t need to give into pumpkin temptations when you are on the keto diet. When you make mug cakes, you generally make them for one serving, but you can always double or triple the recipe to serve more or have some keto pumpkin cake leftover.

KETO PUMPKIN MUG CAKE

2 tablespoons almond flour
1 tablespoon coconut flour
2 tablespoons Swerve or sweetener of choice
½ teaspoon baking powder
½ teaspoon pumpkin pie spice
Pinch of salt
2 tablespoons butter, melted
2 tablespoons pumpkin puree
½ teaspoon vanilla
1 egg

Mix together dry ingredients in a bowl or mug.
Add in wet ingredients and mix until combined.
Stir in egg and mix until just combined.
Pour into greased ramkin or mug.
Microwave for 50 - 75 seconds until cake is firm on top.
