Easy Instant Pot Elderberry Syrup Recipe + Keto Version

Here’s my quick, easy and budget friendly homemade Elderberry Syrup recipe that I make right in my Instant Pot! This recipe is a staple in my house all year long, but especially in the Fall to help boost our immune systems for cold & flu season. I even included a sugar free version that I make when I am eating keto but still want to enjoy this powerful antioxidant elixir. We’ve been using this recipe in our home for years and I always double or triple the recipe because it stores beautifully in the fridge for months. Batch cooking for the win!

Ingredients:
2/3 cup Organic Elderberries
3 ½ cups Filtered Water
1 cup Raw Honey or alternative sweetner of choice (I use 1 cup of Swerve + 10 drops of stevia)
2 drops of DoTERRA ginger essential oil
2 drops of DoTERRA cinnamon essential oil
2 drops of DoTERRA clove essential oil
2 drops of DoTERRA OnGuard essential oil

Instructions:
1. Add water and elderberries to Instant Pot.
2. Place lid on and set the steam release knob to the Sealing position.
3. Press the Pressure Cook (or Manual) button or dial and then the +/- button or dial and select 9 minutes. When the cook cycle finishes, Quick Release the pressure.
4. Open the lid and strain elderberry mixture into a glass or metal bowl to cool slightly. Press slightly on cooked berries to get all of the juice out.
5. When elderberry mixture has cooled down for a few minutes, add the honey (or alternative sweetner) and whisk until fully incorporated (if you add the honey to hot syrup, it will cook away some of the immune boosting properties of the raw honey).
6. Add essential oils and whisk well.
7. Pour into an airtight glass container and once fully cooled store in the back of the fridge. I make a big batch and store extra in the fridge for months!
