Ergothioneine is a naturally occurring antioxidant amino acid, produced by various bacteria and fungus plants. Edible mushrooms, which are the fruiting bodies of ergothioneine, are the leading dietary source of ergothioneine. Mushrooms with abundant levels of ergothioneine include white buttons and gray oysters. There are other foods that contain ergothioneine in lower levels, such as beef, oats, pork, and oats.
