Spice Cake with Cream Cheese Icing – Cook Like Mama Did –
Spice Cake Layers
1 1/2 STICKS SALTED BUTTER
1 3/4 CUP GRANULATED SUGAR
3 EGGS ROOM TEMPERATURE
1 1/2 CUPS MILK
2 1/2 CUPS ALL-PURPOSE FLOUR
2 TSP. BAKING POWDER
1/4 TSP. SALT
2 TSP VANILLA
1/2 TSP. GROUND GINGER
1 TSP. GROUND CINNAMON
1/2 TSP. GROUND NUTMEG.
Preheat the oven to 350 degrees.
Use stand mixer and add butter and sugar and mix well. Add eggs. Add baking powder, salt, ginger, cinnamon, and nutmeg. Add milk.
Start adding flour 1/2 cup at a time. Finish adding flour. Add vanilla.
Pour into well-greased cake pans. If using round pans use 3 pans. If you only have two pans reserve 1 cup of batter (too much batter for 2 rounds)
Bake until set about 25-30 minutes. Watch close at end and take out when toothpick comes out clean. “Very mild spice flavor, I think it is the perfect blend.” Tammy
COLLARD VALLEY COOKS VOL 1
Cream Cheese Icing
4 1/2 CUPS POWDERED SUGAR
1 STICK SALTED BUTTER (ROOM TEMPERATURE)
8 OZ. CREAM CHEESE (ROOM TEMPERATURE)
1 TSP. VANILLA FLAVORING
1 TBSP. EVAPORATED MILK
1 CUP TOASTED CHOPPED PECANS (OPTIONAL)
Beat butter and cream cheese until fluffy. Add powdered sugar 1/2 cup at a time, alternating with a little of the milk until both are used. Add vanilla and turn mixer on high and fluff for 1 minute. Add pecans and mix until blended.
