⚠️There are thousands of recipes for hodgepodge! Meat, fish, vegetable and mushroom! With pickles or sauerkraut, with or without capers. There are really thousands of recipes).
And there is no recipe for "right" or "wrong" hodgepodge (as well as any other dish), there are just recipes you personally like🤗 Let's not forget the idea that I always promote - tastes don't argue🤗
📝Solyanka:
Beef on the bone - 500g (you can replace with pork or chicken)
Smoked ribs - 300g
Smoked pork shoulder - 200gm
Cold smoked sausage - 200g
Hunting sausages - 200g
⚠️ All smoked meats can be changed to your taste⚠️
Onions - 2 units
Carrots - 1 pc
Tomato paste - 1-2 tbsp
Salty cucumbers - 100-200g
Pickle brine - 1-2 tablespoons
Water - 3-4 liters
Green and black olives
Salt, black and red pepper, honeysuneli, bay leaf to taste.
🥣 Potatoes are not included into traditional hodgepodge but they are delicious too) Capers are up to the individual. I don't feel any difference in taste with them. The amount of meat in Solyanka is up to your wish and ability.
🥣Boil the beef together with onions and smoked ribs for 1-2 hours. Separate meat from bone. At this time fry onion and carrot for 3-5 minutes, add sliced cucumbers and fry for 5-7 minutes. (Cucumbers should become soft). Add tomato paste and pour 1 cup of brine. Stir and let simmer for 10-15 minutes.
⚠️My main secret to delicious hodgepodge is cucumbers and brine from them. It doesn't matter if they are barrel pickles, pickled or pickled, the main thing!!! You have to like them personally! ⚠️
🥣Drain the broth and add the prepared dressing. Slice up all the meats and add them to the soup. (I cut everything in straws, you can also dice it.) Stir and cook for 20 minutes. Add olives (I cut them in half), spices and pour the second glass of brine. Taste the salt. If necessary, add more salt. Bring to the boil and leave to infuse for 10-30 minutes.
