I was at the market and found fresh vegetables☺️ I immediately decided it was time to make a set of "Pate" (Pâté, to put it simply).
What's your favorite pate?) Eazy's is liver 😅

📝 Eggplant pate:
Eggplant - 2pc.
Tahini (white sesame paste) - 2-3 tsp.
Lemon juice - 1-2 tsp.
Garlic - 3 cloves
Salt, black pepper, smoked paprika
Olive oil - 3 tablespoons.
Cilantro, parsley
You can add yogurt, mint to taste.
🍆The eggplants are well washed, you can cut in half to speed up the cooking process. Put in the oven at 200 degrees for 40 minutes (As soon as the eggplants are completely soft, it's done). Peel the skin and put in a blender (you can chop it with a knife). Add all the ingredients and whisk until smooth. To serve, put it on a plate and sprinkle with chopped greens and drizzle with 1 tbsp of olive oil.
📝Baked pepper pate:
Sweet peppers - 2pcs.
Adygean cheese - 100gm
Walnuts - 30-50g
Olive oil - 3tbsp.
Salt, smoked paprika, black pepper.
Put the pepper in the oven at 200 degrees for 40-50 minutes. When ready, take them out of the oven and let them cool. Peel and peel the peppers and put them in a blender. Add all the ingredients. I recommend heating walnuts in a pan, it will give off more flavor) Whisk everything thoroughly and serve with olive oil.
📝Baked beet terrine with chickpeas:
Beets - 2 pcs.
Chickpeas - 100g
Peanut paste (without sugar) - 2-3 tablespoons
Lemon juice - 1-2 tsp.
Garlic - 3 cloves
Olive oil - 3 tablespoons.
Salt, black pepper, paprika
Feta or feta cheese to serve
