Kolache 2 ways ! *Plus a Bonus Recipe | Fresh milled Flour
Today I am showing how I make Kolaches 2 ways with 1 dough, plus a Bonus dessert recipe! We got Breakfast, Dinner, and Dessert all from 1 recipe!

Dough Recipe:
1. Heat up 3/4 cup milk & 1/2 cup of butter to ~110*F, set aside
2. Mill Hard wheat berries to make 3.5 cups flour
3. Add 3 cups flour, 1/3 cup sugar, 1 tsp salt, and milk/butter mixture to a bowl, stir
4. Once incorporated, add 2 eggs (one at a time), then add 2&1/4 tsp of rapid yeast. mix
5. Add rest of flour ~1Tbsp at a time until the dough forms a ball.
6. Knead until smooth and passes the window pane test
7. Let rise until doubled in size(~1hr)
8. Divide dough into 20 equal size pieces & choose your fillings.
9. Shape and or fill, then brush with egg wash, let rise for another 30-40 minutes.
10. Bake filled Kolaches for 375*F for 18-20 mins.

Cream Cheese Filling Recipe:
Mix 8 oz of cream cheese, 1/4 cup of sugar, 1/2tsp vanilla, 1/4tsp cinnamon, 1/8tsp nutmeg, 1 tsp lemon juice, a pinch of salt, and 1 egg yolk to a bowl for about 3-4 mins (scraping down sides as needed.)

I used apricot preserves on top of my cream cheese before baking.

Streusel topping recipe:
1. Melt 1Tbsp butter, add 2 Tbsp sugar, 2 Tbsp flour, and a pinch of salt mix together and set aside.
2. When ready to use, break up with fork and sprinkle on top.
