1 large pineapple
100g caster sugar
100ml golden / white rum
100ml coconut cream
1 lime, juice only

Steps
1. Cut off the top of the pineapple and use a spoon and a small serrated knife to scrape out the flesh, leaving an inch around the peel. Cut the meat into small pieces and put it in a blender along with the powdered sugar, rum, coconut milk, and lime juice.
2. Pour liquid into the pineapple peel, you will have some leftovers, put it in a container and put the pineapple in the freezer for two hours.
3. After two hours, use a fork to scrape and mix the half-curd liquid inside the pineapple. Repeat every hour until the juice turns into granita; Depending on the size of your pineapple, it may take 4-5 hours.
4. After the first three stirrings, the pineapple can be left in the freezer overnight so you can always make it ahead of time and get it done the day you need it.
5. Store chilled pina colada straight from the pineapple or in a martini glass, garnish with a sprig of mint, cocktail cherries, and cocktail umbrella if desired.
