If you want the perfect donees on your steak, I highly recommend a @meatermade thermometer. The #meatermade reads the internal temp as well as the ambient temp around the meat.

For this cook I used a thick cut bone in ribeye, I seasoned it with smoked salt. Then I seared it until I got a nice brown crust, I then placed it indirect to finish cooking at 135 internal temperature, I let it rest for 5 min before slicing it. The volcanes had cheese, guacamole and the ribeye topped with salsa. Who’s in?
