Pork Agrodolce Recipe

This is some very serious comfort food. Oh yeah!

1 1/2 pounds boston butt pork, cut into bite sized pieces
1 tomato paste ball*
2 Tbsp balsamic vinegar
2 tsp cider vinegar
1 tablespoon honey
1 inch squeeze of anchovy paste
1 clove minced garlic
1 green onion for garnish
1 tsp minced fresh rosemary
1 tsp smoked salt, plus more to taste
1 tsp chipotle powder
black pepper to taste

Mix all of the above ingredients together in a cooking dish and mix by hand. Cook in oven at 325 degrees F for about two hours. Cook until tender and make certain it doesn’t dry out.

Serve over mashed potatoes and spoon the delicious sauce on top. Toss the green onions on and chow down. This is a sweet and sour recipe that also pairs well with sweet potatoes. If you use sweet potatoes make them savory.
