Quick Corn Casserole Recipe for Christmas and Thanksgiving Dinner

This QUICK CORN CASSEROLE recipe is from my cookbook Real Food on a Budget.

Topping:
1 Cup Biscuit Mix
3 Tablespoon. butter or margarine
Filling:
2 Cups whole kernel corn
2 Tablespoons flour
1 Cup evaporated milk
1 Tablespoon sugar
2 eggs
1/8 tsp. pepper
¼ tsp. salt

Note: If you don't have Biscuit Mix, use the following:
10 T. flour
1¼ tsp. baking powder
1¼ tsp sugar
¼ tsp. salt
4 Tablespoons shortening
2 Tablespoons of butter
If this mix is too soft, add a bit more flour.

Note: If a blender is unavailable, use an electric mixer on high speed or whip with a wire whip. Beat corn into liquid for 2 minutes.
