INGREDIENTS

1- 2 pounds beef stew meat or chuck roast
diced into bite sized pieces
2-½ cup diced onion
3-1 tablespoon minced garlic
4-14 oz can unsweetened coconut milk
5- 3-4 tablespoons curry powder
6- Salt

INSTRUCTIONS
1. Add all ingredients to slow cooker and stir
to combine
2. Cover and cook on low for 8-10 hours, high for 4-5 hours
3. Serve over rice topped with fresh cilantro
or as desired
