If you are on Keto or law carbs diet, but really missing all those good health benefits of bananas, then ferment out all the sugars and the starches from the bananas.

You can use #Coconut #kefir or #whey or #kraut juices
Only #vitamins & #minerals minus sugars, carbs, starches

The dosages I used : 1 tablespoon (or 15 ml) of kefir in 250ml jar.
For a 1 litre jar ( 1 quart), use 60 ml of kefir.

In the winter it might take su to 3 days to see the bubbles, In the summer it’s done within hours, just check it often.

The longer, the bananas ferment, the sour it tastes and the more negligible the sugar content will be.
