Learn about the folding process, and how yeasts swipes right. Folding is an important part of bread making, it develops gluten, while not crushing all the gas out of the dough from the yeast. It also lets the water full hydrate the flour in the dough (autolyse). We will also learn about the benefits of freezing some sourdough starter. You can also give leftover mom for your friends who want to start their own starter to take care of; create a bread community.
