Ciabatta Rolls: little puffy pillows!

Lori Fiechter here during Coronavirus shut-down, encouraging those of you who stocked up on flour to get in the kitchen and bake something new!

We had garlic toast made with halved ciabatta rolls last week and I thought, "I can make that!" I think making hoagie rolls gave me confidence. These turned out...well...ugly but tasty! The most fun part about making ciabatta for me is making the biga (a heavy starter) the night before and opening the lid the next morning to see what kind of a bubbly swamp brew it has made!

This is a two-day process so you'll need to think ahead to make the biga the night before. I doubled the recipe which ended up making about 14 rolls, each 4-5 oz.
