An Italian Rates Pasta Sauce | Blind Tomato Sauce Taste Test

Many of our viewers have asked for Eva to review common pasta sauces, so we're here to bring you a blind tomato sauce taste test!

...but with a twist.

I want to test not only the sauces, but also Eva's palate. In order to do so I'm slipping in her VERY OWN TOMATO SAUCE RECIPE. Will she be able to distinguish that her sauce isn't store bought? Will she even like it???

SPAGHETTI ALLO SCARPARIELLO RECIPE

Bring a large pot of water to boil. Salt liberally and add spaghetti to serve. Stir occassionally.

In a saucepan over medium heat, add one clove crushed garlic and 2-3 tbsp olive oil. When the pan comes up to temp, add 1 pint (350g) halved grape tomatoes. Sautèe for 1-2 minutes, stirring frequently, then cover and allow to cook for a few minutes more. When the tomatoes have almost turned into a pulp, turn off the heat and add some fresh basil and grated Parmiggiano-Reggiano cheese (optional). Remove the garlic clove.

The pasta should be drained 1 minute before "al dente." For example, if an 11-minute cook time is recommended, drain the pasta after 10 minutes. Before draining, reserve about 1oz. of the pasta water for later.

Add the drained spaghetti into the tomatoes, along with the reserved pasta water, and stir vigorously over medium/high heat until the sauce thickens slightly and becomes creamy. Serve immediately.
