Easy Smoked Deep Pit Roast Pork

This is my take on the Deep Pit Pork Roast that certain Save Mart grocery stores used to sell 10 or more years ago. It's first smoked then cooked low and slow in a regular oven.

Apply some Pappy's Seasoning rub to the roast the night before. Then smoke for 2-3 hours, fat side down. Finally turn the roast fat side up, wrap in foil or butcher paper and slow roast in the oven for 6-8 hours @ 225F or 110C. This was a pork butt roast that I had in the freezer. I find the pork shoulder roast works better for this preparation. This could likely be done with a beef roast as well, but I've not tried that yet.
