Makes 4 Sandwiches.

1 cup chicken cut into small pieces.
1 cup celery chopped small ( if you don’t like as much, use 1/3 cup).
1/3 cup frozen peas.
3 Tbsp light mayonnaise.
1 Tbsp spicy mustard.
1 tsp honey.
Sprinkle of Dill, Paprika, salt and pepper.

Oil to coat frying pan. Smart Balance Oil today.

Cook chicken on oil coated pan, medium heat, stir and toss occasionally, until all white and wait until some golden brown.

In large bowl, place cooked chicken on prepared dressing mix.
Use same hot frying pan from cooked chicken, to cook peas lightly. Add a few teaspoons of water and keep tossing peas until hot.

Add peas and celery to chicken and dressing. Mix well. Add a little more mayonnaise if desired. Or wait and add more mayonnaise to sandwich bread.

Transfer chicken salad to bowl with lid or cover with wrap. Chill in refrigerator. Serve cold. Add lettuce, tomato, onion or avocado if you like. Or serve with crackers and pickles or with a side of green grapes.
