Lacto-fermentation methods have been used by humans for thousands of years. Lacto-fermentation refers to the process by which Lactobacillus organisms convert lactose and other sugars in food into lactic acid. Lactic acid fermentation is the anaerobic conversion of glucose into lactic acid. It could include the production of lactic acid in milk or other carbohydrates derived from fruits or vegetables. Prior to the invention of refrigeration and pasteurization, we used to manage pathogens through fermentation or competitive exclusion, where the conditions are favorable for beneficial bacteria to grow, crowding out our pathogenic bacteria.
