Why sourdough is a better option if you want to eat pasta? well you can make it at home asnda you know exactly what the ingredients are.
Another important point ids that you slightly change the chemical status of the flour by adding the culture, which starts fermenting the flour within.

I also suggest if you want to dry it once you prepared it to use water instead of eggs to guarantee a safe conservation of the product.

Recipe:
400 gr all purpose flour
100 gr semolina finely milled
4-5 eggs (260 gr liquid)
1 drizzle of olive oil
50 gr sourdough starter culture.
