Tart Dough: Cookie Textured Crust

Tart dough also known as Pate Sucree or Sweet Paste, has a crumbly cookie texture, you can actually use tart dough to make decorative cookies, with royal icing.
In this video I'll show you how to make the dough by hand without a mixer, and how to line a tart shell with it. In my next video I'll show you how I make my maple caramel pecan tart, with this tart shell. It's my favorite "pecan pie recipe" I make it every Thanksgiving.

Tart Dough Recipe
Dry Ingredient Bowl
2c Unbleached All Purpose Flour
1/2c Sugar
Pinch Salt
5oz Cold Butter cubed (keep in fridge until time to make dough)

Wet Ingredient Bowl
2 Yolks
1 Egg
2T Heavy Cream
