Chicken, Broccoli & Rice Casserole with Cheese - Great recipe for leftovers or rotisserie chicken!

This Chicken, Broccoli & Rice Casserole with cheese is a great way to use up leftovers or to throw something together with what you have in the pantry. I like to use a jar of my home canned boneless, skinless chicken breast (learn how to can chicken here https://youtu.be/OK5RCU9HagE) and I often have leftover rice because I always make extra. That makes this meal something I can throw together in under 5 minutes and then just let it back for about a half hour and a delicious, filling supper is ready to serve!

INGREDIENTS

* Shredded chicken (up to two cups - I'm using about 1 1/2 cups)
* Cream of mushroom soup (or any cream of soup, like cream of celery)
* cooked rice (up to two cups cooked)
* 1/2 cup mayonnaise
* ~ 1 1/4 cups shredded cheese
* Chopped, steamed broccoli (I'm using a 12 oz. frozen package microwaved for 5 minutes)
* Ritz crackers
* 2 Tbsp butter

INSTRUCTIONS

1. Shred chicken or break into small pieces.
2. Mix all ingredients EXCEPT crackers and butter together in a bowl.
3. Spray your casserole dish with some non-stick cooking spray, then spread filling out in dish.
4. Crush Ritz crackers and mix with about 2-3 Tbsp butter. (I'm using a little over a half sleeve of crackers in this video and 2 Tbsp. butter, but if you use a larger dish, you might want a little more topping to spread over everything.)
5. Bake in a 350º oven for about 30 minutes or until the casserole is hot throughout.
