Pork Spareribs and Beef Back ribs on the Pit Barrel PBX (little bit of fail in there too!)

Fired up the Pit Barrel PBX for the first time in a while, have a couple nice racks of spareribs and some wagyu beef ribs. Doing some freezer rotation here and grabbed all the ribs left so I can restock with some fresher ones.

Used lump on the pit barrel and I think that was a mistake, it got a little hotter in there than I had anticipated and about half of one of the spareribs was a little more crispy that anybody in their right mind would like.

The rest came out amazing, just like they always do. Beef ribs stole the show, wow those came out great.

So lesson learned, use briquettes in the barrel... or keep a real close eye on it. Lump burns hotter and I think that got me a little bit.
