Wagyu Brisket Trim using an Alaskan Ulu Knife (mostly time lapse)

Trying to learn how to use an Alaskan Ulu knife, so why not test it out on a nice wagyu brisket! A lot of fat here.

Honestly the knife's a little thick, and I'm just figuring out how to use it, but it got the job done! I'll use it some more to see how I like it when it comes to using it for my BBQ endeavours.

There's definitely some things I like about it, and some things I'm not quite sure about. More to come...
