Diner Compound Ganache [Chocolate spread](മലയാളം)

This Simple Compound Ganache is easy to make and a great low cost/value alternative to coverture. You can use this in a variety of different desserts like a filling or glaze for cakes, truffles and even some cheesecakes.

Instructions:
1)Add the water, cream sugar and cocoa powder to a pot and bring to boil
First add the cocoa powder to the sugar and mix together to reduce the amount of clumping that comes from the boil process
2)Whisk frequently to prevent burning the base of the mix in the pot

As the mix boils, it will first double in size, and then it will compress and half it's size. at that point, while it is still producing bubbles, remove from the heat

3)Add the butter and mix well

4)After the butter is melted, pour the mix over your chopped compound chocolate. be sure it is fully coated, use a spatula to submerge any exposed chocolate

5) Let sit for 2 minutes to melt

To bond the mix together you can pour it in a blender afterwards, this will help make it silky and bring the richness as well as the stiffness once it sets.

Let sit for a minimum of 4 hours before using.
