1) Boil Water
2)Once Boiled, reduce heat and add 60% Chocolate on top in a glass bowl to melt
You Want to Melt the Chocolate slowly, so be sure the heat is on low
3)Warm Up your cream and milk together in a pot
4)Add the egg yolks, Sugar and vanilla together and mix while you wait for the milks to warm
5) Pour half of your warmed milk into the egg mix and stir to temper the mix and level the temperature
6)Boil the Remaining milk and cream
7) at boil, add your egg milk mix and whisk until it thickens
8) Remove from heat and add the butter first, then add to the chocolate. stir well
9)Temper the ganache with the whipping cream by transferring 25% of the ganache and equal parts whipping cream to an empty bowl and mix
10)Add the Tempered mix to the rest of the ganache to temper the rest and cool all of the ganache.
11)Add the remaining whipping cream and mix with a spatula
Store and cool.

Mousse is good refrigerated up to 7 days

It is recommended you remove from the fridge at least 2 hours before use to let soften
